pepper jam
ingredients
- 1lb cayenne peppers, stems removed
- 1C cider vinegar
- 3C sugar
- 35g low sugar pectin, 1 packet
directions

Add the cayenne peppers to a food processor and process for a few minutes until finely chopped.
1lb cayenne peppers -
Add the chopped peppers, vinegar, and pectin to a pot. Bring to a rolling boil, stirring constantly.
1C cider vinegar, 35g low sugar pectin -
Take off the heat and add the sugar. Place pot back on the heat and stir constantly. Return to a boil and then stir for 1 minute. Remove from heat and spoon off any orange foam.
3C sugar - If canning, immediately fill your prepared canning jars and boil sealed jars in a water bath for 10 minutes to process. Remove from water bath and set jars on a towel to cool
