pepper jam

ingredients

  • 1lb cayenne peppers, stems removed
  • 1C cider vinegar
  • 3C sugar
  • 35g low sugar pectin, 1 packet

directions

  1. Add the cayenne peppers to a food processor and process for a few minutes until finely chopped.

  2. Add the chopped peppers, vinegar, and pectin to a pot. Bring to a rolling boil, stirring constantly.

    1C cider vinegar, 35g low sugar pectin
  3. Take off the heat and add the sugar. Place pot back on the heat and stir constantly. Return to a boil and then stir for 1 minute. Remove from heat and spoon off any orange foam.

  4. If canning, immediately fill your prepared canning jars and boil sealed jars in a water bath for 10 minutes to process. Remove from water bath and set jars on a towel to cool
