hot honey sauce

  • salt, to taste
  • 10g chili flakes, dried
  • 40g honey
  • 185g hot sauce, Franks Red Hot works great
  • oil, for frying

  • 3 chicken breasts
  • salt
  • pepper
  • garlic powder
  • chipotle powder
  • 3T olive oil

  1. Fry dried chili flakes in oil with salt until fragrant. About 1 minute.

  2. Add honey and hot sauce. Cook on low-medium heat for 5 minutes, stirring frequently. Set aside an keep warm until ready to use.

  1. Butterfly the chicken breast and if necessary use a mallet to pound the chicken to an even thickness throughout. Season the chicken with salt, pepper, garlic powder, and chipotle powder. Drizzle with olive oil. Set aside for 30 minutes.

  2. Place the chicken on a cooling rack over a sheet pan and bake in the oven at 325°F until it reaches an internal temperature of 140°F (25-30 minutes).
  3. Remove the chicken from the oven and set the oven to a high broil, moving the oven rack to the highest position. Brush a thick layer of hot honey sauce on the chicken and return to the top rack of the oven to broil for 2-5 minutes, until the sauce starts to burn and bubble. Remove from the oven, flip the chicken and repeat the process 3 more times.
