- 2lbs chuck roast
- 1 sweet onion, diced
- 5 cloves garlic, minced
- 2 guajillo chili peppers, dried
- 5 chiles de arbol, dried
- salt, to taste
- msg, to taste
- 3g ground black pepper
- 3g smoked paprika
- 3g cumin
- 3g oregano
- 3g chili powder
- 4C beef stock
directions
- Heat the dutch oven on the stove top over medium-high heat.

Cut the beef into pieces that will fit in the bottom of the dutch oven if needed. Salt the beef on all side and sear in the hot pan for 2-3 minutes per side until a brown crust forms.
2lbs chuck roast, salt -
Remove the beef from the pan. Add onion, garlic, guajillos, chiles de arbol, salt, msg, black pepper, smoked paprika, cumin, oregano, and chili powder. Cook until fragrant then add the beef stock.
1 sweet onion, 5 cloves garlic, 2 guajillo chili peppers, 5 chiles de arbol, salt, msg, 3g ground black pepper, 3g smoked paprika, 3g cumin, 3g oregano, 3g chili powder, 4C beef stock - Add beef back to the pot. Bring to a boil, then reduce to a simmer.
- Simmer for several hours until beef is very tender and shreds easily. Serve on fresh corn tortillas with cilantro and onions.
