ingredients
- 1 1/2C all purpose flour
- 1/2t salt
- 1t baking soda
- 1C white sugar
- 1/2C unsalted butter, softened
- 2 medium bananas, mashed (~1 cup)
- 2 eggs
- 1/2C plain yogurt, full fat
- 1t vanilla extract
- 1/2C walnuts, chopped
directions
- Preheat the oven to 350°F and grease the bottom of a loaf pan.

In a medium bowl, whisk together the flour, salt, and baking soda.

In the bowl of a stand mixer fitted with a paddle attachment, cream the sugar and butter at medium speed for two minutes.
1C white sugar, 1/2C unsalted butter -
Beat in the bananas, eggs, yogurt, and vanilla for one minute at medium speed.
2 medium bananas, 2 eggs, 1/2C plain yogurt, 1t vanilla extract - Add the flour mixture to the stand mixer bowl and mix until just combined.

Fold the walnuts into the batter with a spatula.
1/2C walnuts - Transfer the batter to your prepared loaf pan and bake for 50-60 minutes. A toothpick inserted into the middle of the loaf should pull out with some crumbs, not cleanly. Allow to cool to room temperature.
