rachel's banana bread

Cook 50-60 minutes
Yields 1 loaf

ingredients

  • 1 1/2C all purpose flour
  • 1/2t salt
  • 1t baking soda
  • 1C white sugar
  • 1/2C unsalted butter, softened
  • 2 medium bananas, mashed (~1 cup)
  • 2 eggs
  • 1/2C plain yogurt, full fat
  • 1t vanilla extract
  • 1/2C walnuts, chopped

directions

  1. Preheat the oven to 350°F and grease the bottom of a loaf pan.
  2. In a medium bowl, whisk together the flour, salt, and baking soda.

  3. In the bowl of a stand mixer fitted with a paddle attachment, cream the sugar and butter at medium speed for two minutes.

  4. Beat in the bananas, eggs, yogurt, and vanilla for one minute at medium speed.

    2 medium bananas, 2 eggs, 1/2C plain yogurt, 1t vanilla extract
  5. Add the flour mixture to the stand mixer bowl and mix until just combined.
  6. Fold the walnuts into the batter with a spatula.

  7. Transfer the batter to your prepared loaf pan and bake for 50-60 minutes. A toothpick inserted into the middle of the loaf should pull out with some crumbs, not cleanly. Allow to cool to room temperature.
